Storage & Service Tanks

Service Tanks are designed to store the homogenized product discharged from the Preparation Mixer and ensure a continuous, stable supply to the refining process. Storage Tanks are used for buffering, storing, and continuously supplying refined chocolate to downstream processes while maintaining optimum temperature, viscosity, and product homogeneity.

Between refining, tempering, and depositing, chocolate spends hours in tanks. Any cold spot in that time starts unwanted crystallisation; any hot spot risks the product. The tank is the least exciting equipment in the plant right up until it costs you a batch.

Alpy builds two complementary vessels: Service Tanks and Storage Tanks.

Both are double-jacketed and electrically heated, holding chocolate, compound, and cream products at uniform temperature throughout the vessel — no cold corners near the wall, no degradation near the elements. Hygienic, food-grade stainless steel construction throughout.

Optional equipment

  • Vibrating sieve — filters out unwanted particles before the product reaches the depositor, protecting downstream equipment
  • Fan group — draws off volatile compounds and excess moisture while the product is held, which matters most with sensitive chocolate and compound recipes
